SHRIMP SALAD REMOULADE

Servings: 6

INGREDIENTS:

1/3 cup grainy mustard
¼ cup finely chopped celery
¼ cup finely chopped scallions
2 tablespoons finely chopped dill pickle
2 tablespoons chopped fresh parsley
2 tablespoons extra-virgin olive oil
1 tablespoon prepared horseradish
1 tablespoon red or white wine vinegar
3 6-ounce cans deveined medium shrimp, rinsed and drained
Salt to taste
Lettuce leaves

PREPARATION:

In large bowl combine mustard, celery, scallions, dill pickle, parsley, olive oil, horseradish and vinegar until well mixed. Toss with shrimp. Add salt to taste.

To serve, line platter with lettuce leaves; top with shrimp salad.
