SHRIMP SALAD REMOULADE

INGREDIENTS:1/3 cup grainy mustard¼ cup finely chopped celery ¼ cup finely chopped scallions 2 tablespoons finely chopped dill pickle 2 tablespoons chopped fresh parsley 2 tablespoons extra-virgin olive oil 1 tablespoon prepared horseradish 1 tablespoon red or white wine vinegar 3 6-ounce cans deveined medium shrimp, rinsed and drained Salt to taste Lettuce leaves |
PREPARATION:In large bowl combine mustard, celery, scallions, dill pickle, parsley, olive oil, horseradish and vinegar until well mixed. Toss with shrimp. Add salt to taste.To serve, line platter with lettuce leaves; top with shrimp salad. |
