ARTICHOKE SPINACH DIP

Featuring nutrient-rich canned artichokes and spinach, this easy-to-make dip will quickly become a favorite in your home!

Servings: 3 cups
Prep Time: 10 minutes
Cook Time: 20 minutes

INGREDIENTS:

1 14-ounce can artichoke hearts, drained
1 13.5-ounce can spinach, well drained
1 8-ounce package Neufchatel cheese, softened
½ cup grated Parmesan cheese
1/2 cup low-fat Greek yogurt
½ teaspoon salt
¼ teaspoon ground black pepper
Crostini or Crackers


PREPARATION:

In food processor combine artichoke hearts and spinach; coarsely chop. Remove to large bowl. Add Neufchatel cheese, Parmesan cheese, yogurt, salt and pepper.

Preheat oven to 400°F. Grease shallow 1-quart baking dish or casserole; spoon mixture into dish. Bake 15 to 20 minutes until mixture is heated through.

Serve with crostini or crackers.
